Campus Life has recently refurbished the microwave hub below the Atrium into a kitchenette. I guess it was to provide resources for students who choose to bring their own lunches to uni. Of course we could always heat up our Tupperware filled with spag bol, but now that we have the added advantage of a sink and some kettles, it got me wondering about how far us students could go to make a meal. Picture this: a bowlful of hot noodles, tossed with mushrooms, carrot and spinach, topped with a ‘fried egg’ and cooked completely in a microwave. “You must be crazy Brendon,” you say. It sounds like a mouthful but it will be delicious. It will take a little prep from home but once you get to uni you could do the whole thing in ten minutes tops. It’s my Microwave Mi Goreng.
- 1 baby carrot
- 2 mushrooms
- Small handful of baby spinach
- 1 egg (make sure that the egg hasn’t been stored in the fridge or it will go bad at uni)
- 1 packet of instant Mi Goreng noodles (you know, the kind with all the little sauces)
You will need:
- Plastic container (to carry veggies and egg)
- A knife
- A microwave
- A serving bowl
- A fork
- A kettle
Slice the carrot and mushrooms thinly and place in a sturdy container with the spinach and the egg. Pack this in your bag with the noodles, a bowl and fork.
- Boil some water in a kettle. You will need about 200 mL. Once boiled, open the noodle packet and place the noodles into the bowl. Pour over the boiling water and place the bowl of noodles in the microwave.
- Cook on a high heat for two minutes till the noodles are cooked. Be careful that the water doesn’t boil over the sides of the bowl.
- Once cooked, carefully drain the water from the bowl. Add the sauces that come with the noodles and the veggies and stir till it is all combined. Crack the egg on the top of the noodles allowing the yolk to settle at the centre of the dish.
- Place the bowl back in the microwave and cook for a further two minutes. Make sure that the egg is cooked. Then grab a fork and dig in!
3 Ingredient Banana Pudding.
A friend of mine once sent me a link to this recipe for a banana muffin that could be made in the microwave. What was even more impressive was that it only required three ingredients: a banana, an egg and vanilla essence.
- Peel an overripe banana and mash in a bowl till smooth.
- Add an egg and mix completely.
- Then add one tablespoon of vanilla essence and stir till smooth. Pour into a small ramekin (you may need two).
- Place the ramekins one at a time into a microwave and cook on high for two minutes. You will end up with a fluffy cake.
- Top with vanilla ice cream and caramel topping and serve. This pudding is perfect for breakfast as well!
